TrofaiachThe passion for metals began more than three decades ago when Kurt Forstner graduated in materials science from the Montanuniversität Leoben and earned his doctorate in the field of forming technology. After many years in the industry, Kurt Forstner is now his own boss as a knife maker.
By using high-quality technological materials and applying precise processes, he creates exquisite kitchen knives characterized by exceptional sharpness, edge retention, and cutting ability. Forstner's "Chef de Cuisine knives" typically measure between 180 and 250 millimeters; some are all-rounders, while others are specially designed for cutting meat, fish, or vegetables, depending on the intended use. The knife maker from Trofaiach produces special coatings made from Damascus steel himself, layering, forging, and grinding up to 90 layers.
