St. Stefan ob StainzOur farm is located in the middle of the Schilcherland with its own game reserve, we are a member of the "Ölspurwirten" and a Slow Food farm. Furthermore, we have been tested by "Gault Millau" since 2014 and rewarded with a toque.
In order to be able to offer our guests fresh and healthy dishes, we strive to use mostly regional products in our kitchen. In this way, our restaurant's menu is embedded in the cycle of the seasons. With all the first-class raw products, which of course also include local beef and poultry, our focus is on deer specialities.
In the months from May to December, we offer our guests venison dishes in all possible variations. We attach great importance to gentle preparation so that the flavour and nutrients of this valuable foodstuff are preserved. We remain true to our philosophy of respecting the animal in its entirety by carefully processing all the meat. A stress-free kill for the animals is the basic prerequisite for first-class meat quality.
The pastures of Sommereben are located directly around our restaurant. The aroma of the lush, unfertilised herb meadows permeates every pore of these wonderful, shy animals. The natural seasoning is the secret to a delicious game dish that couldn't be tastier or more original.
