Terra tells of the rootedness of the culinary arts with nature. We bring this story to the plates with a menu. The "Terra" menu comprises seven plates - the menu is surrounded by numerous small dishes and bites. Even the prelude shows that we break the usual conventions in "Terra": Guests are welcomed with the outgrowths of a braised oat root and black garlic, accompanied by the reddish shimmering healing water from the nearby spring of Bad Sauerbrunn - an earthy start with bold sulphur and iron aromas. Again and again, supposedly unusual combinations are resorted to, which then prove to be unerring aromatic magic. For example, a light-footed homage to Styria, in which pumpkin and pumpkin seed oil successfully harmonise with fruity components such as blueberry and green strawberry.
