Artificial but by no means artificial: Bernhard Gruber from Lungau built his own cheese stronghold with the Fromagerie and has been grinning from ear to ear ever since. Perhaps because he says "cheese" so often during tastings and guided tours?
In culinary terms, Bernhard Gruber has actually seen it all. From luxury hotels to the royal court of Bhutan and alpine cheese dairies. He stuck with the latter. The more he delved into the culinary matrix, the more it became clear that cheese was the Holy Grail, because it is as versatile as it is lively and can do one thing above all: surprise. And to achieve this, you have to be pretty good with Bernhard Gruber, whose cheeky streak has matured as well as Camembert.
The art of cheese
Not far from the majestic Riegersburg castle, the Salzburg native experiments with the "who's who" of Austrian cheese specialties in his cheese art workshop. One is given a bath in Uhudler grape essence, the next is covered in mountain herbs and the third is refined with Zotter chocolate. Fortunately, even laypeople have access to the cheese laboratory. The cheese tasting makes your heart beat faster and the unobstructed view of the castle is not bad either.
