A Masterpiece of Maturity – The Cheese Art of Bernhard Gruber
Not artificial, but certainly crafted – that’s the motto of Bernhard Gruber, the creative mind behind the Fromagerie, which he has built into his own cheese stronghold. No wonder he’s grinning ear to ear as he often says "Cheese" during tastings and tours. Gruber has seen it all in the culinary world: from luxury hotels to the royal court of Bhutan, and even alpine cheesemaking. Yet, it was the latter that truly captured him, and for a good reason: cheese became his Holy Grail. Versatile, lively, and always surprising, it is truly a masterpiece of nature.
In his cheese workshop, just a stone's throw from the majestic Riegersburg, the Salzburg native experiments with Austria’s finest cheese specialties. The ingredients are as diverse as the flavors – from Uhudler grape essence baths to mountain herbs, and even Zotter chocolate used to refine certain cheeses. Luckily, even amateurs are welcome in this "cheese lab," where every bite is an experience, and the view of the Riegersburg is equally charming.
Tours & Tastings – An Experience for Every Palate
For groups, the Fromagerie offers a variety of tours, including the "Grand Tour to Discover the World of Cheese," where you can taste ten currently ripe cheeses. For connoisseurs, there’s the "Cheese-Wine Harmony," where perfectly paired wines complement the cheeses. A particularly special experience is the "Cheese-Craft Beer Harmony," where regional craft beers are served alongside cheeses that pair perfectly with them.
Individual Tasting – A Delight for Solo Visitors
A unique highlight is the tasting platter available in the shop, featuring ten current cheeses served with fresh bread. You’ll learn all about the different cheeses, and if you like, you can also sample various raw milk butter varieties.
